Florence Chauvet

This is where I come from and my journey has not been boring…  I was born and raised in the West of France in the Pays de Loire Region.  I started working in a local restaurant during the summer at the age of 14 by cleaning fresh mussels and doing dishes.

When I turned 16, I went to a culinary school for 2 long years in which at the time I did not enjoy!  I then moved to Paris and worked in a Marseille restaurant for 3 years.  I decided to move to London even though I struggled with and knew very little English.  I worked at the Berkley Hotel where I learned English and still had time to go to culinary school.

I met Chef Albert Roux and he offered me a job in Key Largo, Florida.  Prior to Florida, I moved to Amsterdam and work at his hotel “The Grand hotel” for 6 long months.  On my 25th birthday I moved to Florida where I worked in 2 different hotels between Key Largo and Cocoa Beach.  Four years later, I was transferred to Dallas where I have been here since.  I began my career working in hotels followed by catering.  April 2011, I was honored with the opportunity to work as Executive Sous Chef at the Dallas Convention Center for Centerplate.

I decided to open a food truck in 2012, but it took me over a year to get everything together. Chez Flo's Gourmet food truck has been open since August 2014.  Chez Flo's Sandwiches Around the World has been open since August 2016. Life has been a great journey so far and I can’t wait to see what the future holds.
